Replacement grip tapes differ in 3 main points:

1 - The pattern of the surface is more a matter of taste, which feeling the player may have on the grip.
2 - There are sticky to dry grip bands. If you play indoors, the temperatures are low and you don't sweat as much, the grip tape can be sticky. When playing outside at high temperatures, a dry grip tape is recommended.
3 - The strength of the grip tape is important when it comes to arm protection and grip strength, or whether you want to wrap an additional overgrip or not.

You can find this information in the features list for each grip tape.
